Cream of Chicken Veggie Orzo

  • 1 bag of Orzo Pasta
  • 2 tbsp olive oil
  • 1/2 sweet pepper diced
  • 1/2 carrot diced
  • 3 cloves garlic minced
  • 8-10 cherry tomatoes halved
  • 2-3 fresh cups baby spinach
  • 1 can of cream of chicken soup
  • 2 cups chicken stock
  • 1/4 tsp pink Himalayan sea salt
  • 1/4 tsp ground black pepper
  • OPTIONAL grated parmesan cheese

Add orzo to a hot dry saucepan and cook until pasta is slightly toasted mixing continually. Add olive oil carrot, cherry tomatoes, garlic and sweet pepper and spices, mixing continually for 4 minutes. Add Cream of chicken soup . Mix to combine. Add Chicken stock and spinach. Mix. Bring quickly to boil and immediately lower to simmer. Cover and cook for 15 to 20 minutes, until most of the liquid is absorbed. stirring once halfway through. Mix in option parmesan cheese and serve.
