Creamy Tuscan Chicken

  • 1 1/2 lbs boneless skinless chicken thighs
  • 1 1/2 tbsp Cooking With Greens No Salt Italian Blend
  • 1 tbsp Cooking With Greens Seasoning Blend
  • 1 tbsp olive oil
  • 2 tbsp butter
  • 3 tbsp white wine
  • 1 sweet onion chopped
  • 5 large cloves garlic pressed and chopped
  • 1/4 cup sun dried tomatoes cut in to slivers
  • 3 handfuls of fresh baby spinach
  • 2 cups heavy whipping cream
  • 1 1/2 cups shredded aged Parmiagiana Reggiano
  • 2 tsp Cooking With Greens No salt Italian Blend

Season both sides of chicken thighs with No Salt Italian Blend and Seasoning Blend. Add olive oil to a large saute pan and heat. Add Chicken to pan, searing each side to brown. Remove from heat. Add butter, onions, garlic, and sundried tomatoes to pan. Cook for 2 minutes and add white wine. Cook until absorbed. Add heavy cream and 2 tsp No salt Italian Blend and cook until slightly reduced. Fold in baby spinach until slightly wilted. Cut Chicken into quarters and add to pan. Add Parmiagiana cheese and combine. Taste and reseason. Serve over pasta or mashed potatoes.
