Parmesan Garlic Shrimp

  • 2 lbs Peeled and deveined Shrimp
  • 1 box of linguini prepared
  • 1 vidalia onion diced
  • 6 large cloves of garlic minced
  • 1/2 cup white wine
  • 1.5 cup heavy cream
  • 2 cups raw spinach
  • 1/2 to 1 cups of sun dried tomatoes chopped
  • 1/2 to 1 cup of shredded Parmesan Cheese
  • 1/4 cup fresh parsley chopped
  • 1 pat butter
  • 1 tbsp onion powder
  • 1 tbsp garlic powder
  • 1 pinch pink himalayan sea salt
  • 1 tbsp olive oil
  • OPTIONAL: chopped bacon or bacon bits
In a large saucepan, add oil and butter and heat. Add shrimp and cook until slightly done. Remove from pan and set aside. In same pan, add Onions and cook until caramelized. Add white wine and bring to simmer. Cook appx 5 minutes to cook off alcohol. Add heavy cream and stir. Bring to simmer. Add garlic, spices and sun dried tomatoes Add Spinach and toss until wilted. Add parsley. cook for an additional minute and add Shrimp. Add cheese and OPTIONAL bacon bits and toss. Serve over pasta and enjoy!
