Shrimp and Chicken Salad with Barbecue Dressing

BARBECUE DRESSING

  • 3/4 cup Sweet Cooking with Greens Barbecue Sauce (or any other barbecue sauce)
  • 1/4 cup balsamic vinegar
  • 1/2 cup olive oil
  • 3 tbsp butter
  • 1 tsp Cooking with Greens Go To seasoning
  • 2 tbsp lemon juice

Melt butter. Whisk all ingredients together. Serve.

SALAD

  • 1 bag Spring Salad Mix
  • 1 tomato sliced and halved
  • 1/2 cup shredded cheese
  • 1 avocado sliced
  • 1 ear corn 
  • 1/2 cup candied walnuts
  • 1 cucumber sliced
  • 4 oz roasted chicken chopped
  • 2 lbs peeled, de-veined shrimp
  • 2 tbsp Cooking With Greens Spicy Seafood Seasoning
  • olive oil

Place entire ear of corn in microwave for 4 1/2 minutes. Chop off bottom half of ear and squeeze out corn. Shuck kernels and set aside.  In a bowl, toss raw shrimp with Spicy Seafood Seasoning. In a wok or saute pan, add olive oil and cook shrimp until done. Toss all ingredients together and drizzle with Barbecue Dressing.
