Shrimp Tostadas

  • 2 limes
  • 6-8 ripe Avocados
  • 2 tomato
  • 1-2 red or sweet onions (red is better)
  • 2 bunches on cilantro
  • Cumin
  • Onion powder
  • Garlic powder
  • Salt
  • Pepper
  • Corn tortillas
  • A bag of spinach leaves
  • 4 cans of pinto beans (drained)
  • Mild salsa
  • Fresh garlic
  • 1-2 bags of frozen shrimp
  • A bottle of sriracha
 
BOOTLEGGED REFRIED BEANS
Saute onions and garlic in skillet until slightly caramelized. Pour drained pinto beans and sauteed onions, garlic, cumin, onion powder, garlic powder, salt, and pepper into food processor. Blend while adding preferred oil until smooth. (I used olive oil)
 
GUACAMOLE
Mash Avocados, Lime juice, diced tomatos, diced red onions, cumin, salt, cayenne, onion powder, garlic powder, and cilantro. (Adjust ingredients to your liking)
 
SHRIMP
Cook shrimp in skillet with butter, fresh parsley, old bay, onion powder,garlic powder, pepper, and a half of a lime squeezed.
 
 
LAYERING
corn tortilla
bootlegged refried beans
guacamole
mild salsa
shredded spinach
corn mixture
shrimp
sriracha (drizzled)
