Veggie Lo Mein
- 1 pack of Lo mein noodles cooked and drained
- 2 tbsp olive oil
- 2 to 3 cloves minced
- 1 cup crimini mushrooms sliced
- 1 sweet red bell pepper julienned
- 1/2 cup snow peas
- 1 cup spinach
- 1 cup broccoli florets
- 2 tbsp soy sauce
- 1 tbsp Hoisin sauce
- 1 tsp sesame oil
- 1/2 tsp ground ginger
- 1/2 tsp sriracha sauce
- 1 tsp brown sugar
- 1 tsp Cooking with Greens Go To blend
- chopped green onions
- toasted sesame seeds
In a small bowl, whisk together soy sauce, hoisin, sesame oil, ginger, sriracha, brown sugar and Go To blend. Set aside. In a large wok, add olive oil to pan and vegetables. Cook until vegetables soften. Drizzle in sauce and cook for 2 minutes. Add in cooked Lo Mein noodles. Toss and warm through. Serve topped with chopped green onions, toasted sesame seeds and a drizzle of hoisin sauce.
