Berry Croissant Bake (Easy Breakfast Casserole, Brunch, Make-Ahead)

  • This Berry Croissant Bake is a simple, make-ahead breakfast casserole loaded with strawberries, blueberries, raspberries, and creamy custard—perfect for brunch or special mornings!

    Introduction

There’s nothing better than waking up to a sweet, berry-filled breakfast that feels like dessert! Our Berry Croissant Bake combines buttery croissants, juicy berries, and a rich cream cheese custard for a crowd-pleasing brunch or holiday treat. It’s easy to prep ahead, bakes up golden and fluffy, and is always a family favorite.

    Ingredients

    • 4 large croissants, broken into small pieces (use already baked croissants, not dough)
    • 1 cup sliced strawberries
    • ½ cup blueberries
    • ½ cup raspberries
    • 1 block (8 ounces) cream cheese, softened
    • 2/3 cup granulated sugar
    • 3/4 cup milk
    • 2 large eggs
    • 2 teaspoons vanilla extract

    Instructions

    1. Preheat oven to 350°F. Spray a 9 x 9-inch baking dish with cooking spray.
    2. Spread the croissant pieces evenly in the prepared dish. Scatter all the berries evenly over the croissants.
    3. In a mixing bowl, beat cream cheese with an electric mixer until fluffy. Gradually add sugar, milk, eggs, and vanilla, mixing until well combined.
    4. Pour the cream cheese mixture evenly over the croissants and berries.
    5. Cover the dish and refrigerate for at least 15 minutes, or up to 14 hours for a make-ahead option.
    6. Remove the cover and bake for 35–40 minutes, or until golden brown and set.
    7. Serve warm, dusted with powdered sugar and/or drizzled with syrup if desired. Enjoy!

    Tips & Variations

    • Try with day-old croissants for extra texture.
    • Swap in blackberries or peaches for a seasonal twist.
    • Add a sprinkle of cinnamon or lemon zest to the custard for extra flavor.
