Sweet potato biscuits

  • 2 cups flour
  • 2 Tbsp baking powder
  • 1/2 cup brown sugar
  • 1/2 tsp cinnamon
  • 2 Tbsp Honey
  • 1 tsp Cooking with Greens Pink Himalayan Sea salt
  • 8 Tbsp Cold butter
  • 2 cups mashed sweet potatoes or canned sweet potatoes
  • 1/4 cup heavy cream

Preheat oven to 450 degrees. Mix flour, baking powder, cinnamon, brown sugar and salt. Shred cold butter with a grater. Cut in cold butter until combined. Combine honey and sweet potato. Slowly mix in cream and sweet potato. Heavily flour a flat surface and knead dough (dough will be really wet). Add more flour until dough is not sticky. Flatten out 1 inch thick and cut dough into circles (you can use a glass). Sprinkle lightly with flour.  Bake on a baking sheet for 14 minutes. Serve.
