Vegan Beetz Curried Meatballs

  • 3 boxes "Veggie Delight" brand (or other) Vegan Meatballs
  • 1 bag frozen mixed peppers and onions
  • 1 can coconut milk
  • 2 tbsp Curry powder
  • 2 tbsp Cooking with Greens No Salt Go To Blend
  • 1 Tbsp Cooking with Greens Creole blend
  • 1 Tbsp dried Parsley
  • 2 Tbsp olive oil
  • 2 Cups Vegetable broth
  • 1 cup water
  • 1 cup Vegetable Based "Better than Bouillon" 

Saute peppers and onions for 5 minutes in olive oil. Toss "meatballs" in and cook to brown on all sides. Once meatballs brown, toss in broth, water, veggie base bouillon, coconut milk and spices. Once everything starts to boil, reduce heat to medium low for 15 to 20 mins covered. Serve.
