Banana Cream Cheese filled French Toast
- 6 slices of Oatmeal bread (Pepperidge Farms) or other bread
- 3/4 stick of butter
- 2 extra large eggs
- 3 overripe bananas
- 1 1/2 tbsp softened cream cheese
- 1/4 cup pecan pieces
- 1/2 cup Whipping or Heavy Cream
- 1 tbsp cinnamon
- 1/4 tsp nutmeg
- 1/2 tsp vanilla
- 1 cup dark brown sugar
- whipped cream
- Maple syrup
In a small bowl, mash 1 1/2 overripe banana until creamed. Add cream cheese, 1/2 tbsp brown sugar and a few drops of vanilla and combine. Set aside. In another shallow dish (pie dish) combine 1 tbsp brown sugar, cinnamon and nutmeg. Combine. Add Heavy cream and combine. Add eggs and combine well. Add remaining vanilla. combine. Prepare bread by spreading banana/cream cheese mixture between 2 pieces, forming a sandwich. Heat a griddle or frying pan with 2 to 3 tbsp of butter. Dip "sandwiches" in the egg mixture, insuring that each side and edges are covered. Place on griddle or in pan and brown on each side. Remove from heat. Cut remaining bananas into slices. Place remaining brown sugar and nut pieces together in a small bowl or plate. Cover each banana slice with nut/brown sugar mixture. Heat remaining butter in pan or griddle. Place coated bananas and nuts in pan and cook on each side for a few minutes. Remove from heat and spoon over french toast. Top with whipped cream and maple syrup. Serve.
