Banana Pudding Sushi

  • bananas
  • 2 cups sushi rice rinsed until water is clear
  • 3 cups water
  • 1 tsp pink himalayan sea salt
  • 1/4 cup coconut milk
  • 2 tbsp sugar
  • 1 tsp vanilla
  • 1 cup Vanilla Wafers 
  • 2 ready made vanilla pudding cups
  • sushi mat
  • saran wrap
  • caramel sauce
  • chocolate sauce

In a saucepan, combined rinsed rice, water and salt. Bring to boil. Immediately reduce heat to simmer and cover. Cook until all liquid is absorbed. once rice is cooled, Add coconut milk, sugar and vanilla to rice mixture. mix and allow rice to absorb liquid. Place vanilla wafers in a ziplock bag and crush cookies. pour crumbs into a shallow bowl. peel banana and place in shallow bowl to coat with crushed cookies. Wrap sushi mat with saran wrap. place rice mixture on sushi mat in a rectangular shape. Sprinkle rice with vanilla wafer crumbs. Place coated banana on rice. Roll. Drizzle 1 cup of pudding , caramel sauce and chocolate sauce over sushi roll. Cut roll into sections with a wet knife. Use 2nd cup of pudding as dipping sauce. Serve.
