Black Beans and Rice

  • 2 tbsp oil
  • 1 onion, chopped
  • 3 cloves garlic minced
  • 1/3 red pepper diced
  • 1/3 orange pepper diced
  • 1 cup uncooked rice
  • 2.5 cups vegetable broth
  • 1 can black beans drained
  • 2 tsp Cooking With Greens Tex Mex Blend
  • 1 package frozen corn
In a large stockpot, add oil and heat. Toss in onion and peppers. Cook until translucent. Add rice and cook for an additional 2 minutes. Add stock and spices, and allow to come to boil. Add beans, corn and cover pan and reduce to simmer. Cook until liquid is absorbed and holes start to form in rice. Mix and serve.
