Champagne Vinaigrette (Light, Tangy, Easy Salad Dressing)

  • This Champagne Vinaigrette is light, tangy, and quick to make—perfect for elevating salads, grain bowls, or roasted veggies with a fresh, zesty flavor!

    Introduction

A homemade vinaigrette is the easiest way to take your salads to the next level, and this Champagne Vinaigrette delivers with bright, tangy flavor and a touch of sweetness. It comes together in minutes and pairs beautifully with greens, roasted vegetables, or even as a marinade for chicken or fish. Fresh, simple, and so much better than store-bought!

    Ingredients

    • 1/4 cup champagne vinegar
    • 1/2 cup olive oil (or avocado oil)
    • 1 Tbsp Dijon mustard
    • 2 tsp honey (or maple syrup)
    • 1 small shallot, minced (or 1 Tbsp finely chopped red onion)
    • 1/2 tsp Cooking with Greens Go To Blend (or salt and pepper, to taste)
    • Fresh herbs, chopped (optional—try parsley, tarragon, or chives)

    Instructions

    1. In a small bowl or jar, combine champagne vinegar, Dijon mustard, honey, minced shallot, and Go To Blend (or salt and pepper).
    2. Whisk or shake to combine.
    3. Slowly drizzle in olive oil while whisking, or add oil to the jar and shake vigorously until the dressing is emulsified.
    4. Stir in fresh herbs if using.
    5. Taste and adjust seasoning as needed.
    6. Store in the refrigerator for up to one week. Shake well before each use.

    Tips & Variations

    • For a creamier vinaigrette, add 1 Tbsp mayonnaise or Greek yogurt.
