Chicken Rollettes

  • 1 lb to 1.5 lb boneless skinless chicken pounded flat
  • 6 oz cream cheese softened
  • 1 tbsp extra virgin olive oil
  • 2 tbsp dried chives
  • 4 cloves garlic minced
  • 3 cups fresh baby spinach leaves
  • olive oil
  • Cooking with Greens Pink Himalayan Seasoning Blend
Preheat oven to 375 degrees. Mix cream cheese, olive oil, garlic and chives. Blend well. Spread onto chicken surface. Lay spinach leaves out onto cream cheese. Roll and close with toothpicks if necessary. Lay on a baking sheet covered with aluminum foil and sprayed with nonstick. drizzle each chicken piece with olive oil and sprinkle with Cooking with Greens Seasoning Blend. Bake at 375 degrees for 30 minutes.
  • 2 tbsp vegetable oil
  • 2 tbsp flour
  • 1 tbsp Cooking With Greens Go To Blend
  • 1 can of Cream of Mushroom soup
  • 1/2 cup half and half
  • 1 cup of chicken stock
In saucepan, heat oil and add flour and seasoning mixing continually until flour is browned. Add Chicken Stock mixing continually. mix in cream of mushroom soup allow to come to simmer and add half and half. Simmer. Add more broth if needed.
