Chicken with Italian Dressing Reduction

  • 2.5 lbs of boneless skinless chicken
  • olive oil
  • Cooking with Greens Herb Blend
  • Pink Himalayan Sea Salt
  • 1 onion chopped
  • 3 cloves garlic minced
  • 2 red, orange or yellow peppers julienned
  • 1 bottle of italian dressing
Add Italian dressing and garlic to a saucepan. Bring to a boil and reduce to simmer until dressing is reduced to half volume.
Coat all chicken pieces with olive oil, Herb blend and pink salt. Add chicken pieces to hot pan. Do not turn chicken pieces until seared and sides start turning white. Turn and sear other side. Remove from pan.
In another pan, add olive oil and add onion and peppers with herb seasoning and pink salt. Cook until onions are caramelized and peppers are slightly softened. Add atop chicken pieces. Pour Italian dressing reduction over chicken and serve.
