Creamed Spinach
- 10 oz fresh baby spinach
- 4 oz cream cheese or vegan cream cheese
- 1/2 cup shredded Parmigiano or vegan Parmigiano cheese
- 1/2 small sweet onion diced small
- 1 large clove garlic minced
- 1 tbsp butter or plant based butter
- 1/2 cup milk or dairy free milk
- 1/4 cup heavy cream or dairy free whipping cream
- 3/4 tbsp Cooking with Greens Go To Blend
- 1/2 tsp Cooking With Greens No Salt Onion Black Pepper Blend
- Water
- Ice
In a large pot, bringĀ about 1/2 pot of water to boil. Add baby spinach and cook for 5 minutes. Immediately drain spinach and shock by placing in Ice bath. In a saute pan, melt butter and add onion. Cook until slightly translucent. Add garlic and cook for 2 minutes. Add in milk, cream and cream cheese. Once simmering, drain spinach and add to pan. Mix well, add spice blends and fold in parmesan. Serve.
