Garlicky Shrimp and Pineapple Salsa

  • 3 tbsp flour
  • 2 lbs shrimp
  • 2 tsp paprika
  • 1 tbsp Cooking with greens seasoning Blend
  • 15-20 garlic cloves minced
  • 1 stick butter
  • 1/3 cup white wine
  • optional chopped cilantro
  • 2 tbsp olive oil
  • 2 tbsp olive oil

In a bowl or ziplock bag, combine flour, spices. Mix well. Add shrimp either with shells on, or de-shelled. Cover all shrimp and allow to set for a few minutes until flour is absorbed. In a saucepan, melt butter. Add 1 tbsp olive oil.  Add garlic and cook until browned. Add wine and cook for 4 minutes. remove from pan. Add 2nd tbsp olive oil to pan. Add shrimp and cook for a few minutes on each side until done. Add butter garlic sauce to pan and mix. Serve over rice or pasta.

PINEAPPLE SALSA

  • 1 can of crushed pineapple drained
  • 1 small to medium red onion chopped
  • 1 jalapeno pepper with seeds removed diced
  • 4 to 5 tomatoes diced
  • optional cilantro 
  • parsley chopped
  • 2 tbsp lime juice
  • Hot sauce to taste
  • pink himalayan sea salt to taste
  • black pepper to taste

Mix all ingredients. allow to sit for about 30 minutes. Serve.
