Garlicky Shrimp and Pineapple Salsa
- 3 tbsp flour
- 2 lbs shrimp
- 2 tsp paprika
- 1 tbsp Cooking with greens seasoning Blend
- 15-20 garlic cloves minced
- 1 stick butter
- 1/3 cup white wine
- optional chopped cilantro
- 2 tbsp olive oil
- 2 tbsp olive oil
In a bowl or ziplock bag, combine flour, spices. Mix well. Add shrimp either with shells on, or de-shelled. Cover all shrimp and allow to set for a few minutes until flour is absorbed. In a saucepan, melt butter. Add 1 tbsp olive oil. Add garlic and cook until browned. Add wine and cook for 4 minutes. remove from pan. Add 2nd tbsp olive oil to pan. Add shrimp and cook for a few minutes on each side until done. Add butter garlic sauce to pan and mix. Serve over rice or pasta.
PINEAPPLE SALSA
- 1 can of crushed pineapple drained
- 1 small to medium red onion chopped
- 1 jalapeno pepper with seeds removed diced
- 4 to 5 tomatoes diced
- optional cilantro
- parsley chopped
- 2 tbsp lime juice
- Hot sauce to taste
- pink himalayan sea salt to taste
- black pepper to taste
Mix all ingredients. allow to sit for about 30 minutes. Serve.
