Lobster salad
- 4 medium sized lobster tails cooked and diced into bite sized pieces
- 1/3 cup mayo
- 1.5 tbsp fresh lemon juice
- 1 tsp fresh dill chopped
- 1/2 cup celery center stalk chopped finely
- 1/2 tsp dijon mustard
- 1 tbsp green onion or chives chipped into thin strips
- 1 tsp Cooking with Greens Spicy Seafood Blend
- Avocado
In a bowl, combine lobster, mayo, lemon juice, dill, green onion and seafood blend. Taste and reseason if necessary. Serve topped with avocado slices on a salad, in a toasted bun, or as lettuce wraps.
