    Introduction

Parmesan Crusted Salmon is a quick and delicious way to elevate weeknight dinners. Each salmon fillet is topped with a savory mix of Parmesan, herbs, and breadcrumbs, then baked until the crust is crispy and the fish is perfectly tender. It’s a family favorite that pairs well with veggies, salad, or your favorite grains.

    Ingredients

    • 4 salmon fillets
    • 1/2 cup grated Parmesan cheese
    • 1/4 cup panko breadcrumbs (or regular breadcrumbs)
    • 2 Tbsp melted butter or olive oil
    • 1 Tbsp Cooking with Greens Go To Blend (or a mix of garlic powder, onion powder, paprika, and herbs)
    • 1/2 tsp salt
    • 1/4 tsp black pepper
    • 1 Tbsp fresh parsley or dill, chopped (plus more for garnish)
    • Lemon wedges, for serving

    Instructions

    1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper or foil.
    2. Pat salmon fillets dry and place them skin-side down on the prepared baking sheet.
    3. In a bowl, combine Parmesan, breadcrumbs, melted butter (or olive oil), Go To Blend, salt, pepper, and chopped herbs. Mix until well combined.
    4. Press the Parmesan mixture evenly onto the top of each salmon fillet, gently pressing so it adheres.
    5. Bake for 12–15 minutes, or until the salmon flakes easily with a fork and the crust is golden brown.
    6. Garnish with more fresh herbs and serve with lemon wedges.

    Tips & Variations

    • Substitute cod or tilapia for salmon if desired.
    • Add a pinch of cayenne or chili flakes for a spicy kick.
    • Serve with roasted vegetables, rice, or a crisp green salad.
