Peaches and Cream French Toast

  • 6 slices potato loaf bread
  • 1 12 oz can sliced peaches
  • 3 tbsp cream cheese
  • 2 tbsp cinnamon
  • 1 tsp lemon juice
  • 2 tbsp vanilla
  • 3 eggs
  • 1/2 cup heavy cream
  • 3 tbsp brown sugar
  • 4 tbsp sweet cream butter
  • 2 tbsp butter
  • Maple Syrup

Drain syrup from can of peaches and divide peaches in half.  Chop the first half can of peaches into small pieces. Melt butter in pan. Add brown sugar, 1 tbsp vanilla and lemon juice. Add chopped and halved peaces to pan. Mix well and allow to come to simmer until sugars caramelize.

Remove from heat and spoon half of the chopped peaches and sauce into a bowl. Add cream cheese and blend well. Spread this cream cheese mixture evenly sandwiched between 2 bread pieces.

In a bowl, whisk together eggs, cream, 1 tbsp vanilla and 1 tbsp cinnamon. Dip "sandwiches" into mixture, making sure to cover each side. Melt 2 tbsp butter on hot pan or griddle.Cook each side until golden brown. Immediately serve, topped with remaining peaches caramelization and drizzle with maple syrup.
