Potstickers with Spicy Dragon Sauce and Lime Honey Cabbage Salad

POTSTICKERS

  • 1 lb chopped meat
  • 4 baby mushrooms diced
  • 1 cup cabbage shredded
  • 3 cloves garlic minced finely
  • 2 green onions minced
  • 1 tbsp hoisin sauce
  • 2 tsp sesame oil
  • 1/2 to 1 tbsp grated ginger
  • 1 tsp or more of sriracha
  • 1/4 tsp white pepper
  • won ton wrappers
  • vegetable oil

 In a large bowl, combine chopped meat (pork, chicken, shrimp, crab, beef..whatever), cabbage, mushrooms, garlic, green onions, hoisin, ginger, sesame oil, Sriracha and white pepper. Assemble the dumplings by placing wrappers on a work surface. Spoon 1 tablespoon of the meat mixture into the center of each wrapper. Using your finger, rub the edges of the wrappers with water. Fold the dough over the filling to create a half-moon shape, pinching the edges to seal. Heat vegetable oil in a large skillet over medium heat. Add potstickers in a single layer and cook until golden and crisp, about 2-3 minutes per side. Serve immediately with sauce, if desired.

 SPICY DRAGON DIPPING SAUCE

  • 1 clove garlic minced
  • 1/4 tsp grated ginger
  • 3/4 cup chicken stock
  • 1/4 cup pineapple juice
  • 2 tbsp  apple cider vinegar
  • 1/2 tsp sesame oil
  • 1/2 tbsp olive oil 
  • 1 1/2 tbsp honey
  • 1 tsp brown sugar
  • 1/4 tsp red pepper flakes
  • 1 tbsp tomato paste
  • 1/2 tbs Soy sauce
  • 1/4 tsp pink Himalayan sea salt 
  • ½ tsp ground pepper
  • 1 tbsp corn starch
  • 1 tbsp water
  • 1/2 tsp sesame seeds (optional)

In a saucepan, saute garlic and ginger lightly in oil. Add broth, vinegar, honey, tomato paste, brown sugar, pineapple juice, pepper flakes and soy sauce, and seasonings and simmer for about 5 minutes. In a small container make a slurry of cornstarch and water. Add slurry to the saucepan and stir until sauce thickens. Add sesame seeds, if using, before serving. If making in advance,cool and refrigerate until ready to use.

LIME HONEY CABBAGE SALAD

  • 1 1/2 cups Chopped or thinly sliced Green Cabbage
  • 1 cup carrot shredded
  • 1/4 red onion minced
  • 1 stalk green onion thinly sliced
  • 1/2 cup parsley or cilantro chopped
  • 1/2 cup lime juice
  • 2 tbsp honey
  • 1 tsp apple cider vinegar
  • 1/4 tsp ginger
  • 1/4 tsp pink sea salt
  • 1/2 tsp sesame oil

Combine all ingredients in a bowl. Allow to sit in refrigerator for at least an hour. Serve.
