Rice pudding

  • 1 1/2 cups cooked rice
  • 2/3 cups golden raisins
  • 1/2 tsp vanilla extract
  • 1/3 cup vanilla or banana rum
  • 1 Tbsp butter
  • 1 beaten egg
  • 1/4 tsp Cooking with Greens Pink Himalayan sea salt
  • 1 Cup Milk or plant based milk
  • 1 cup Heavy whipping cream (divided into 2 half cups)
  • 4 Tbsp white sugar
  • 2 Tbsp brown sugar
  • 1 tsp cinnamon
  • 1/8 tsp nutmeg

Place raisins in a small bowl with rum and soak for a few minutes. Combine cooked rice, milk, 1/2 cup heavy cream, sugar, brown sugar, cinnamon, nutmeg and salt in a saucepan. Cook over medium heat until thick and creamy, approximately 15 to 20 minutes. Stir in remaining 1/2 cup heavy cream, beaten egg, and raisins (you can add in a few drops of the remaining rum) ; cook 2 minutes more, stirring constantly. Remove from heat and stir in butter and vanilla. Serve hot or cold.
