Roasted Corn Salsa

  • 1 small bag frozen corn thawed
  • 1 tomato chopped
  • 1/2 red onion chopped
  • 1 small jalapeno with seeds removed
  • 3 tsp olive oil
  • 1 tbsp honey
  • 1/2 lime juiced
  • 1 stalk green onion mined
  • 1/4 tsp pink himalayan sea salt
  • 2 tsp garlic powder
  • 1 tbsp butter

Roast jalapeno over open flame until slightly charred. Remove seeds and mince. Add jalapeno, onion, tomato olive oil, honey, lime juice, onion and seasonings to bowl. Mix and set aside. Add butter to hot skillet and add corn. heat on high, mixing often until corn starts to caramelize. Add to bowl. serve.
