Seafood Pasta Skillet

  • 1 lb salmon
  • 1 lb peeled, deveined shrimp
  • 1/2 lb crab meat
  • 8oz cooked pasta
  • 1 can unsweetened coconut milk
  • 1 onion chopped
  • 1 14oz can fire roasted tomatoes
  • 3 large cloves garlic chopped
  • 1 jalapeno sliced into strips
  • 1 sweet red pepper sliced into strips
  • 1 orange pepper sliced into strips
  • 1/2 tbsp Cooking with Greens Smooth heat blend
  • 1/2 tbsp Cooking with Greens Creole blend
  • 1.5 cups shredded parmesan cheese
  • 2 tsp sugar
  • 1/2 cup chopped fresh parsley
  • 2 tbsp olive oil

Use half the creole and Smooth Heat blends to season shrimp and salmon. In a large saucepan, add 1 tbsp olive oil and cook salmon partially on each side (salmon will cook fully in sauce) set aside. In same pan, add remaining olive oil, onion, peppers, garlic and jalapenos. Cook until onion is translucent. Add in tomatoes, and spice blends including sugar. Bring to simmer. Stir in coconut milk. Once simmerring, crumble in salmon and crabmeat. cook until salmon pieces are done and add in parmesan. Allow to simmer until sauce slightly thickens. Toss in shrimp and cook for appx 3 minutes, until shrimp is done. Fold in parsley and pasta. Taste and reseason if necessary. Serve.
