Turkey Hash

  • 1 1/2 cups cooked leftover turkey
  • 3 tbsp butter
  • optional 2 tbsp chicken or turkey broth
  • 3 cups potatoes cubed
  • 2 sprigs of fresh dill
  • 1/2 sweet onion chopped
  • 1/4 sweet pepper chopped
  • 3 cloves roasted garlic
  • 1/4 cup heavy cream
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1/2 tsp ground black pepper
  • salt to taste

Boil cubed potato pieces until softened. drain and set aside. Add turkey to food processor and pulse. Add optional broth if meat is too dry. In a large skillet melt butter and add green pepper. Cook for 3 minutes. Add onion. Cook until lightly browned and caramelized. Mash up *roasted garlic cloves and add to skillet. Add turkey and mix well. Cook for 2 minutes and add potatoes. Mix and add cream. Add seasonings and cook for 6 to 10 additional minutes mixing well. Taste and re season if necessary. Serve.

* To roast garlic, preheat oven to 400 degrees. cut of the top of a head of garlic, exposing garlic cloves. Wrap the head in foil and drizzle with olive oil. sprinkle with sea salt and black pepper. Wrap and bake in oven for 45 minutes to an hour.
