Chicken Seitan

  • 2 tbsp olive oil
  • 1.5 cups veggie broth
  • 1.5 cups vital wheat gluten flour
  • 1/4 cup chickpea or garbanzo bean flour
  • 1/3 cup nutritional yeast
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp paprika
  • 1.5 tsp poultry or chicken seasoning
  • 1/2 tsp cumin
  • 1/2 tsp onion powder
  • 1 tbsp sea salt
  • Aluminum foil
Wisk oil and broth together. Set aside. In a seperate bowl mix all dry ingredients. Make a hole in center and add the broth mixture. Stir together until mixed then start kneading for 3 mins. Let rest for 10 mins. Knead again for 30 seconds. Slice into loaves and wrap loosely in foil. Place wrapped loaves in steamer and steam for 30 minutes. Cool. Will last in sealed container in fridge for 10 days, or frozen for up to 2 months!
