Coconut Rice

  • 1 cup coconut water
  • 2 cups uncooked rice
  • 2 Tbsp plant based butter
  • 1 can unsweetened coconut milk
  • 1 1/2 tsp sugar
  • 2 tsp salt
  • 1/4 tsp crushed red chili flakes
  • 1/4 tsp ground ginger

Rinse and soak rice. Add butter, ginger and chili flakes to pot. Cook until butter is melted and fragrant. Add rice in and cook for 2 minutes. Add coconut milk, salt, sugar and coconut water. Bring to boil and immediately lower to simmer and cover pot. Cook until liquid is absorbed. fluff and serve
