Red Mexi Rice
- 3 cups cooked rice
- 1 12oz can diced tomatoes
- 3 cloves garlic minced
- 1/2 sweet onion chopped
- 1/4 sweet pepper chopped
- 1/4 cup sweet corn
- 2 tbsp sriracha
- 1/2 cup chopped cilantro or parsley
- 1 1/2 tsp cumin
- 1 1/2 tsp chili powder
- 1 tsp onion powder
- 1 tsp garlic powder
- 1/2 tsp ground black pepper
- 1/2 tsp salt
- 1 tsp sugar
- 2 tbsp butter
In saucepan, melt butter and add onion and pepper until onion is translucent. Add diced tomatoes, rice and all other ingredients. Combine and cook 6 minutes. Taste and re-season. Serve.
