Vegan Tex Mex Bowl
RICE
- 1 cup longrain rice
- 2 cups water
- 1/2 tsp Cooking With Greens Go To Blend
In a small pot, combine all ingredients and cook until liquid is absorbed. fluff
BEANS
- 1 tbsp Onion chopped
- 1 Tbsp chopped green peppers
- 1 Tbsp Plant based butter
- 1/2 tsp chopped garlic
- 1 tsp olive oil
- 1 tsp Cooking with Greens Go To Blend
- 1 tsp Cooking with Greens Tex Mex Blend
- 1/2 tsp Cooking with Greens No Salt Onion Black Pepper Blend
- 1/2 tsp Cooking with Greens Pink Himalayan Sea Salt
- 1 can Black beans with liquid
In a small pan, combine butter, olive oil and vegetables. Cook until vegetables start to soften. Add in seasonings and black beans with liquid. Simmer for 7 minutes.
VEGAN MEAT MIXTURE
- 1 lb Impossible Brand vegan meat substitute
- 1/3 chopped onion
- 1/3 green pepper chopped
- 1 clove garlic chopped 1 tsp Cooking with Greens No Salt onion black pepper
- 1 tsp Cooking with Greens Go To Blend
- 1 tsp Cooking with Greens Tex Mex Blend
- 1 tsp Olive oil
In a small saucepan, add olive oil and vegetables. Cook until slightly softened. Add in impossible meat and seasonings and brown meat.
CORN MIXTURE
- 2 cups frozen sweet corn
- 1 tbsp plant based butter
- 1 tbsp chopped onion
- 1 tbsp chopped green peppers
- 1/2 tsp minced garlic
- 1/2 tsp Cooking with Greens No Salt onion black pepper
- 1/2 tsp Cooking with Greens Go To Blend
- 1/2 tsp Cooking with Greens Tex Mex Blend
Saute all ingredients until corn is warmed through.
Arrange all ingredients in bowl. Top with Vegan cheddar cheese, tomatoes, lettuce, Vegan Sour cream, guacamole and sriracha
