Chef Wallace's Tuscan Potatoes

  • 4 cups thinly sliced red new potatoes
  • 3 tbsps olive oil
  • 1 tbsp sea salt
  • 1 tbsp ground pepper
  • 10 sprigs fresh thyme
  • 1/2 tbsp Cooking with Greens No Salt Italian Blend
  • 2 tbsp Minced garlic
  • 1/4 cup parsley
  • 2 tbsp bacon grease

Heat deep dish skillet medium high. Add 1 tbsp olive oil and 2 tbsp bacon fat. Layer potatoes evenly across bottom of skillet.Let cook for 10 minutes. Mix potatoes and allow to cook for an addition 5 minutes. Turn heat to low medium, cover for 10 minutes. Serve.
