Cheesy Bake

  • 1 rotisserie chicken shredded and set aside
  • 1 bag of cheese ends (or 1 lb of cheese of your choice)
  • 1 large onion sliced
  • 5 cloves garlic chopped
  • 1 package of multicolor medley (or cherry) tomatoes halved
  • 1/2 red (or other) sweet pepper chopped
  • 1/2 package sliced baby shiitake mushrooms
  • 1 bag of baby spinach
  • 1/4 cup chicken or vegetable broth
  • 1 cup heavy cream
  • onion powder
  • garlic powder
  • sea salt
  • black pepper
  • olive oil
  • 1 box Penne pasta (or pasta of your choice) prepared and drained
Coat olive oil in wok or large saucepan. Bring to high heat and add onions and peppers. Cook until onions are translucent. Add remaining vegetables and cook until spinach is wilted. Add cheese and broth until all cheese is melted. Add cream and seasonings. Add chicken and bring to light simmer. Add Pasta and mix well. Pour mixture into large baking dish. Top with additional cheese and broil until slightly browned. Serve and enjoy!
