Quick Ramen Bowl

  • Udon or rice noodle prepared
  • Roasted chicken pieces (we bought a supermarket rotisserie)
  • 3tbsp oyster or fish sauce
  • 4 cups chicken stock
  • 4 soft boiled eggs
  • 1/2 cup lite soy sauce
  • 1tsp sesame oil
  • 1/4 cup rice wine vinegar
  • 1 cup snow peas
  • 1 cup shiitake mushrooms sliced
  • 1 large onion sliced thin
  • 6 cloves onion minced
  • 1 carrot shredded
  • 2 stalks celery cut small
  • 1 head broccoli chopped
  • 1/2 yellow and orange pepper sliced thin
  • 1 cup bean sprouts
  • 3 green onion stalks chopped
 
Add 3 tbsp oil to bottom of hot saucepan. Add onion, peppers until onions start to get transparent. Add celery, broccoli, snow peas, mushrooms and garlic. Add seasonings and Cook slightly. Add to vegetables, oyster sauce, soy sauce sesame oil, rice wine vinegar and seasonings. Cook until slightly simmering. Add chicken stock. Taste and season again if necessary. Serve over noodles and top with carrots, chicken, sprouts, green onion and half soft boiled egg. Enjoy!
