Corned Beef Hash

  • 1 lb leftover corned beef (see corned beef and cabbage recipe)
  • 1 lb leftover potatoes chopped into small pieces (see corned beef and cabbage recipe)
  • 1/2 large sweet onion diced
  • 1/4 red pepper diced
  • 1/4 cup heavy cream
  • 2 pats of butter
  • Seasoning optional
Pulse corned beef in a food processor and set aside. Add butter to a heated saucepan and add onions and peppers. Cook until onion is browned. Add potatoes. Cook for 7 minutes. Add corned beef. Cook for 7 minutes. Add heavy cream. Cook until hash starts to brown. Serve .
