Skip the freezer aisle and make your own golden, crispy Fish Sticks at home! With Cooking with Greens signature blends, these fish sticks are bursting with flavor and baked—not fried—for a lighter, healthier twist. Serve with lemon, parsley, and your favorite dipping sauce for a meal everyone will love.

Ingredients

  • 1 ½ lb firm fish fillet (like cod or halibut)
  • Cooking with Greens Pink Sea Salt, to taste
  • 1 tsp Cooking with Greens No Salt Onion Black Pepper Blend
  • 1 tsp Cooking with Greens Spicy Seafood Blend
  • 1 tsp Cooking with Greens Latin Blend
  • ½ cup flour
  • 1 egg, beaten with 1 Tbsp water
  • 1/4 cup Panko bread crumbs
  • 1/4 cup regular bread crumbs
  • ½ cup Parmesan cheese, grated
  • Olive oil
  • Zest of 1 lemon, plus juice of ½ lemon (to finish)
  • Parsley, for garnish

Instructions

  1. Preheat oven to 450°F. Oil a baking sheet.
  2. Prep the fish: Pat fish fillet dry and season both sides with CWG Pink Sea Salt. Cut into sticks about 1 to 1 ½ inches thick and 3 inches long.
  3. Mix the seasoning: In a small bowl, combine CWG No Salt Onion Black Pepper Blend, Spicy Seafood Blend, and Latin Blend. Season fish sticks on both sides with this mixture.
  4. Set up dredging station:
    • Place flour in a shallow dish.
    • Place egg wash in a bowl next to the flour.
    • In another dish, mix Panko, regular bread crumbs, Parmesan, and lemon zest.
  5. Coat the fish:
    • Dip each fish stick in the flour to coat both sides; shake off excess.
    • Dip in egg wash.
    • Coat in the bread crumb/Parmesan mixture, pressing gently to help coating adhere.
    • Repeat with all fish sticks.
  6. Arrange on baking sheet: Place coated fish sticks on the oiled baking sheet. Dab the tops with olive oil (don’t brush too hard or you’ll remove the coating).
  7. Bake: Place on the middle rack and bake for 12–15 minutes, or until cooked through and golden. For more color, broil briefly at the end (watch closely).
  8. Finish and serve: Top with extra lemon zest and a squeeze of lemon juice. Garnish with parsley. Serve with your favorite dipping sauce.
