Mushroom Baked Rice

  • 1/2 small onion chopped
  • 1 cup long grain rice
  • 2 cloves garlic minced
  • 1 can condensed cream of mushroom soup
  • 1 1/4 cup beef broth
  • 1 stick of butter
  • pinch of Cooking With Greens Pink Himalayan Sea Salt
  • 1/4 cup chopped fresh parsley
  • OPTIONAL: 1/2 cup Crimini (or other type) mushrooms chopped

Preheat onion to 425 degrees. Combine onion, garlic, mushroom soup, broth, parsley, sea salt and optional mushrooms in a small baking pan. Slice butter atop mixture and Cover with Aluminum foil. Bake for 30 minutes and remove foil. Bake additional 20 minutes. Fluff and serve.
