Orange Breakfast Bread

  • 2 eggs
  • 1.5 tbsp orange zest
  • 1/2 cup margarine softened
  • 1 cup sugar
  • 1/2 cup orange juice
  • 2 cups flour
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 1/2 cup chopped walnuts
  • 1 1/2 cup confectioner’s sugar
  • 3 tbsp orange juice
  • 1/2 tbsp orange zest
Preheat oven to 350 degrees. Sift flour, baking powder and salt together in bowl. Add nuts. In another bowl, beat butter and sugar until combined. Combine one egg. Combine second egg. Stir in rind and juice. Pour this mixture into flour mixture. Stir until moist. Pour mixture into a greased loaf pan. Bake for 1 hour. Let cool. Drizzle with (optional)glaze. Serve.
