Salmon Burgers and Tartar sauce
- 1 lb fresh Salmon skin off
- 1 1/4 tsp Dijon mustard
- 1 clove garlic minced
- 1 Tbsp onion minced
- 3/4 tsp Cooking With Greens Lemon Red Bell Pepper blend
- 1 Tbsp chopped fresh dill
- 1/2 Tbsp Pickle juice
- 1 1/2 Tbsp chopped green onion
- 1/4 cup mayonnaise
- 1/4 tsp Cooking with Greens Pink Himalayan Sea salt
- 1 Tbsp roasted red peppers (in jar) chopped
- 1/4 cup plain breadcrumbs

Cut salmon into 1/4 to 1/4 inch cubes. Set aside. In a small food processer, add 1/4 of the cubed salmon, dijon mustard, garlic, onion, Lemon red bell pepper blend, dill, pickle juice, green onion, mayonnaise and sea salt. Pulse about 10 to 15 times. Place mixture in mixing bowl. Fold in remaining salmon, then chopped roasted red peppers. finally fold in breadcrumbs and shape into approximately 3 burger patties. Place patties on wax paper and allow to set in refrigerator for 2 to 4 hours. Add oil in large fry pan and heat. Add in patties, cooking about 3 minutes, then flip and cook 30 seconds to 1 minute longer. Serve on bun with toppings
TARTAR SAUCE
- 1/2 cup mayonnaise
- 1/4 cup minced dill pickles
- 1/4 cup sweet relish
- 1/2 Tbsp minced fresh dill
- 1/2 tsp lemon juice
- 1/4 tsp sugar
- 1/8 tsp Cooking with Greens No Salt Onion Black Pepper blend
Mix well. Serve.
