Sauteed Mushrooms and Pasta

  • 1lb baby Bella mushrooms
  • 2 cups cooked and drained pasta
  • 1/2 onion chopped
  • 5 cloves garlic minced
  • 2 tbsp white wine
  • 3 tbsp Worcestershire sauce
  • 3 tbsp butter
  • 2 stalks green onion chopped
  • 2 tsp Cooking With Greens No Salt Blend
  • 2 tsp Cooking With Greens No salt Italian Blend
  • 2 tsp Cooking with Greens No Salt Herb Blend
  • 3/4 cup shredded Parmigiana Reggiano cheese
  • 2 cups raw baby spinach leaves
  • 2 tbsp Chicken stock
  • 2 tbsp olive oil

In a hot saucepan, add olive oil and 1 tbsp butter. Add in onion and garlic. Cook until onion is slightly translucent. Add mushroom to pan. Cook for 4 minutes. Add worcestershire sauce. Add white wine. Cook until wine slightly reduces and add chicken stock. Fold in spinach. Cook until wilted. Toss in pasta. Add remaining butter and green onion. Add seasoning and cheese. Serve.
