Scalloped (Au Gratin Style) Potatoes

  • 2.5 lb russet potatoes cut very thin (use mandolin or food processor)
  • 1 cup heavy cream
  • 1 cup chicken stock or broth
  • 1/2 onion diced
  • 1 cup cheddar cheese
  • 1 cup crispy fried onion( in can)
  • salt
  • pepper
  • garlic powder
  • 2 tbsp butter
  • onion powder
  • dried thyme
Preheat oven to 450. Place potatoes sliced, cream and broth in bowl and set aside. In a pot heat butter and onions until onions are slightly translucent. add remaining ingredients except crispy onions. Cook for 10 to 12 minutes ( until potatoes start to soften). Spray a baking dish with nonstick butter and pour contents of pot into it. Level off pan and top with additional cheese and fried onions. Place in 450 degree oven for 15 to 20 minutes. Serve.
