Stuffed Chicken and Gravy

  • Boneless chicken breast flattened
  • Cheese of your choice (Mozzerella, Cheddar, Swiss)
  • Red, orange and yellow peppers sliced thin
  • 1 Onion diced
  • 5 cloves garlic diced
  • 1 package of Shittake mushrooms diced
  • 6 slices of bacon cut into cubes and fried crispy
  • salt
  • pepper
  • onion powder
  • garlic powder
  • paprika
  • 2tbsp butter
In a hot saucepan combine butter and onion until onion is translucent. Add garlic, mushroom, spices and prepared bacon. Set aside Lay out individual chicken pieces. To each, add slivers of peppers, cheese and a small portion of the onion mixture. Roll each and secure with a toothpick if necessary. Position chicken pieces on a baking pan and drizzle with olive oil, salt, pepper and paprika. Cook in 425 degree oven for 2o minutes.
  • 1/4 cup cooking oil
  • 1 cup flour
  • 1.5 cups chicken broth
  • 1 cup heavy cream
  • 1 can cream of soup (celery, chicken or mushroom)
  • salt to taste
  • onion powder
  • garlic powder
  • white pepper
In a sauce pan, heat cooking oil until hot. Slowlyadd flour whisking constantly until browned. slowly add broth continually mixing. Add cream and soup. season and taste. Gravy can be thinned by adding more broth.
