Spinach and Shrimp Scampi

  • 1 lb of shelled deveined shrimp
  • (at least) 3 cloves of garlic diced
  • 1 small onion diced
  • 1/2 box frozen spinach (or substitute fresh)
  • 1 and 1/4 cup of white wine
  • 3/4 stick of butter
  • 1 green onion diced
  • garlic powder
  • onion powder
  • 2 tbsp olive oil
  • salt
  • pepper
  • pasta (linguine, spaghetti, etc)
In large heated saucepan, add olive oil garlic and onion. Cook until onion is translucent. Add butter and green onion. Bring to boil. Add White wine. Bring to boil again. Cook for an additional 8 minutes on high stirring constantly until alcohol is cooked away. Add green onion. Add Shrimp and spinach to sauce. Add spices and cook until shrimp is done. Taste sauce and re-season if necessary. Serve over pasta. Garnish with a shake of Old Bay seasoning and diced green onion...enjoy!
