Italian Chicken and Veggies over Rice

Italian Chicken and Veggies over Rice

  • 2 lb of boneless skinless chicken (tenderloins)
  • 1 bottle of zesty Italian dressing
  • 2 cups of Yellow Rice
  • 4 cups water
  • 1 large onion diced
  • 1 red pepper diced
  • 3 celery stalks diced
  • 5 cloves garlic diced
  • 2 carrots diced
  • olive oil
  • Italian seasoning
  • Onion powder
  • Garlic Powder
  • 1 tbsp sugar
  • salt
Boil slightly salted water and add rice. Cover and reduce. Prep chicken by patting dry and tossing in olive oil, Italian seasoning, garlic powder and onion powder. Place chicken pieces in frying pan that has been coated with olive oil. Cook and flip until both sides are done. Set aside. Add about 3tbsp of olive oil to pan and add all diced veggies. Cook until onion is translucent and carrots are slightly softened. Cut chicken into smaller pieces and toss with vegetables. Set aside. In saucepan, add Italian dressing and sugar. Bring to boil stirring constantly until sauce is slightly reduced. Serve Chicken/Veggie mixture over rice drizzling with reduced Italian dressing....or mix everything in one pot! Enjoy!
