Garlic Vegetable Primavera

  • 1 box Penne Pasta prepared
  • 1/4 head of cauliflower cut into florets
  • 1 carrot sliced
  • 1/2 red pepper chopped
  • 1/2 yellow pepper chopped
  • 1/4 yellow zucchini chopped
  • 1/4 green zucchini chopped
  • 1 stalk celery chopped
  • 1/2 onion chopped
  • 1/2 bundle of asparagus
  • olive oil
  • Parmesan or vegan parmesan cheese shredded
  • 1.5 tbsp vegan butter
  • 1 tbsp pink sea salt
  • white pepper
  • onion powder
  • garlic powder
  • 4 cloves garlic chopped
Saute all vegetables, garlic and half of the seasonings in olive oil until slightly cooked. Place pasta into baking pan and toss with butter, remaining seasoning and olive oil. Mix in vegetable mixture. Cover with shredded Parmesan and bake in 400 degree oven until cheese is melted or slightly brown. Serve and enjoy!
