Jackfruit Fried Chicken

  • 20 oz can of young Jackfruit in water or brine drained and rinsed
  • 2 tbsp Cooking With Greens Pink Himalayan Seasoning Blend
  • 2 tbsp Cooking With Greens Go To Seasoning
  • 3 cloves garlic minced
  • 1 cup of non-dairy milk (Soy,Rice,Almond, etc)
  • 1 tsp apple cider vinegar
  • 1 1/2 cup flour
  • 1/2 tsp dry mustard
  • 2 tsp smoked paprika
  • 1 Tbsp Cooking with Greens Herb Blend
  • Vegetable oil

 Combine Non-dairy milk and apple cider vinegar. Set aside. Cut fibrous ends off of Jack fruit pieces. Season jackfruit pieces with 1 tbsp Seasoning Blend and 1 tbsp Go To Seasoning. Place in ziplock bag and add minced garlic and milk mixture. Allow to marinate in refrigerator from 1 hr to overnight. Drain marinade into a bowl. whisk in 1/2 cup of flour. Place remaining flour in a second bowl. Add Seasoning blend, dry mustard, paprika and 1 tbsp Go To Blend. Heat enough vegetable oil to reach halfway up the Jackfruit pieces. Dredge Jackfruit in flour. Shake off excess. Dredge in wet non-dairy flour mixture , then back into flour mixture. Repeat for all pieces. Once oil is hot enough, cook each piece to brown(about 2 minutes each side) drain and serve.
