Jackfruit Quesadillas

  • juice from 1/2 a lime
  • 1 can of young jackfruit in water or brine, drained 
  • 1/2 tsp sriracha
  • 1 onion cut thinly
  • 4 cloves minced
  • 1 1/2 Tbsp Cooking With Greens Tex Mex Seasoning Blend
  • 3/4 cup vegetable stock
  • 1/2 red sweet pepper cut thinly
  • 1 Tbsp maple Syrup
  • 1 Tbsp olive oil
  • Shredded vegan cheese
  • Flour tortillas

 Squeeze jackfruit in a kitchen towel to remove excess liquid. Shred pieces and set aside. Heat oil and cook vegetables until translucent and softened. Add shredded jackfruit to pan and cook for 2 minutes mixing well. Add stock, sriracha, maple syrup and lime juice. Bring to simmer and reduce. Cover pan and allow to cook until liquid is absorbed. Once absorbed, add Tex Mex Blend and mix well. Set aside. Heat a large dry skillet and place tortilla in pan. top tortilla with shredded cheese and jackfruit meat mixture . cook until tortilla is slightly toasted and cheese has melted. Top with more cheese and another tortilla. Flip and toast other side. remove from heat, cut into quarters and serve with guacamole and salsa.
