Mama Green's Vegan Lemon Pound Cake
- 1 lb softened plant based butter
- 4 cups white sugar
- 1 1/4 cup Just Egg Vegan Egg replacement
- 3 cups coconut milk
- 2 tsp Lemon extract
- 5 cups self rising flour
In a large bowl or mixer, combine butter and sugar, then add Just eggs and milk. Mix in flour and lemon extract. Bake at 350 degrees. Cake is done when a knife or toothpick inserted in the middle comes out clean.
