Vegan orange cauliflower "Chikn"

  • 1 head cauliflower florets
  • 1/2 onion sliced thin
  • 1/4 cup julienned carrots
  • 1/4 cup vegetable broth
  • 1/2 cup broccoli florets
  • 1/2 tbsp Cooking With Greens Go To Seasoning
  • 1 tbsp olive oil
  • 2 tbsp orange zest
  • 1/2 cup grated carrot
  • 1/2 cup onion minced
  • 1 1/2 tbsp brown sugar
  • 1 tbsp rice vinegar
  • 2 tsp ground fresh ginger
  • 2 cloves garlic minced
  • 1/2 tsp ground red pepper flakes
  • 1 1/2 cup orange juice
  • 6 tbsp soy sauce
  • 1 tbsp cornstarch
  • 1/2 tbsp Cooking With Greens Go To Seasoning Blend
Whisk all ingredients in a cold sauce pan until well blended. Turn pan to medium heat, allowing sauce to simmer and slightly thicken for 5 minutes. Set aside.
  • Heat olive oil in a large saucepan and add in cauliflower florets. Sprinkle with Go To Seasoning Blend. Cook for 4 minutes. Add onion and carrots. Continue to cook. Add in Vegetable broth and bring to simmer. Cover pan and allow to cook until broth is absorbed. Pour in about half of the orange sauce and continue to cook until coated and vegetables are done. Add the remaining sauce and toss. Serve over rice and top with green onion and sesame seed.
