    Introduction

    Warm up with a bowl of this creamy, flavor-packed Corn and Potato Chowder! Loaded with sweet corn, tender potatoes, crispy bacon, and Cooking with Greens’ signature blends, this chowder is pure comfort in a bowl. It’s perfect for chilly nights, meal prep, or feeding a crowd—everyone will want seconds!

    Ingredients

    • 6 slices bacon, cooked crispy and chopped
    • 1 large onion, chopped
    • 2 large cans (or bags) roasted sweet corn (or frozen)
    • 2 red bell peppers, chopped
    • 2 carrots, chopped
    • 4 stalks celery, chopped
    • 5 red potatoes, chopped
    • 70 ounces chicken stock
    • 1 cup all-purpose flour, divided
    • 1 cup half and half
    • 1 cup heavy cream
    • 1 Tbsp Cooking with Greens Go To Blend
    • 1 Tbsp Cooking with Greens No Salt Italian Blend
    • 1 Tbsp Cooking with Greens Maple Bacon Blend
    • Cooking with Greens Spicy Seafood Seasoning, to taste (for serving)
    • Oil, for sautéing

    Instructions

    1. Sauté the vegetables:
      In a large pot, heat a little oil over medium heat. Add onion, red bell peppers, carrots, and celery. Cook until veggies are tender.
    2. Add potatoes and seasonings:
      Stir in chopped potatoes, Go To Blend, No Salt Italian Blend, and corn. Mix in half of the flour and cook until fragrant.
    3. Add broth:
      Slowly pour in chicken stock, stirring constantly until evenly mixed. Bring to a boil and cook for about 25 minutes.
    4. Add Maple Bacon Blend:
      Stir in Maple Bacon Blend and cook until potatoes are tender.
    5. Finish with cream:
      In a bowl, whisk the remaining half of the flour into the half and half and heavy cream until smooth. Slowly mix this into the chowder, stirring well.
    6. Add bacon and serve:
      Sprinkle in crumbled bacon. Serve hot, topped with a sprinkle of Spicy Seafood Seasoning.
