Chicken, Sausage, Peppers and Onions over Orzo

  • orzo pasta prepared per box instructions
  • 3 boneless, skinless chicken thighs cut into bite sized pieces
  • 3 sweet italian sausages
  • 1 -28oz can diced tomatoes
  • 1/3 green pepper chopped
  • 2 small onions chopped
  • 1/3 yellow pepper chopped
  • 1/3 orange pepper chopped
  • 1/3 sweet red pepper chopped
  • 1 tbsp tomato paste
  • 2 tbsp Cooking With Greens No salt Italian blend seperated
  • 1 tbsp Cooking With Greens Go To Seasoning Blend
  • 1 tsp Cooking With Greens No Salt Onion Black Pepper Blend
  • 2 tbsp olive oil seperated
  • 4 cloves garlic minced
  • 1/4 cup Marsala wine or Red Wine
  • 2 tsp sugar
  • Shredded Parmesan

In a bowl, mix chicken pieces with half of the seasoning blend. Place half the olive oil in hot saucepan and add chicken. Cook until browned on each side. Remove from heat and add sausages. Cook until browned on each side. Cut into bite sized pieces and return to pan. Add onion and peppers and cook until onion is translucent. Add wine and cook until most of the liquid is absorbed. Add garlic and chicken back to pan. Add in diced tomatoes and remaining spices. Add sugar and simmer until reduced. Add tomato paste and continue to cook for 3 to 4 additional minutes. Serve over orzo with Parmesan
